Happy (early) Earth Day Everyone!
Go pick up some trash on the side of the road. Figure out one more thing in your daily or weekly routine you can clean out and recycle rather than simply throw away. Plant a tree. Walk instead of drive. Take a bus or buy a more eco-friendly vehicle. Dust off your bike and go for a ride. Teach a child about ways they can help the Earth they have inherited. Go Green!

I was recently visiting my sweet nephew Jack and his baby sister Carolina which was such a treat. As spring approaches it is soon going to be time for Jack to start tennis lessons again, so this cake is for him.
I’m also thinking of taking up tennis at the suggestion of a friend who has a racket but no buddy to play with. Sign me up!

Would you have a red themed party? Such a bold color can be toned down somewhat by giving the color plenty of white space. A centerpiece cake like this would be beautiful in a lush red setting. I bet it’s red velvet inside.

I’ve always been a fan of the classic ice cream cake. I may even ask for one this year. But I would never have been bold enough to top it with s’mores to create the ultimate dessert. Thankfully Jessica at How Sweet It Is was that innovative with her dessert thinking and brought this amazing treat into the world. Oh sure, it’s a complete mess, but I bet it tastes amazing.

In the “if you can dream it, you can do it!” category I bring to you an orange and rum spice cake that looks like a raw turkey. I gather the creator of this fine piece of edible art is from the London area. I would have been utterly shocked if this cake showed up on my family’s Christmas dinner table!
