Tis the season for zucchini, so I figured I’d grab some at the grocery store. But it isn’t easy to get to all of the fresh produce we purchase and I had to admit it, but sometimes food goes bad, then into the trash untouched. Determined not to let that happen with the zucchini I bought I was like a woman possessed and decided to whip up a load of zucchini almond bread in a loaf pan gifted to me by my mother-in-law which has been unused since said gifting.
I’m proud to say our cupboards were well stocked with all the fixin’s for the bread according to a simple recipe I found on the Food Network Blog which you can check out by clicking HERE.
Jeremy and I were like a well oiled machine in the kitchen, crushing up this, zesting that, draining and mixing. About 90 minutes after we sprang into action the loaf was ready. It wasn’t healthy, but boy was it delicious. Going to get froyo might have actually been healthier (in a sense) but food you make from scratch always tastes better.

Go pick up some trash on the side of the road. Figure out one more thing in your daily or weekly routine you can clean out and recycle rather than simply throw away. Plant a tree. Walk instead of drive. Take a bus or buy a more eco-friendly vehicle. Dust off your bike and go for a ride. Teach a child about ways they can help the Earth they have inherited. Go Green!
Rapunzel cake aka Tower of Donuts!
I was recently visiting my sweet nephew Jack and his baby sister Carolina which was such a treat. As spring approaches it is soon going to be time for Jack to start tennis lessons again, so this cake is for him.
I’m also thinking of taking up tennis at the suggestion of a friend who has a racket but no buddy to play with. Sign me up!

Would you have a red themed party? Such a bold color can be toned down somewhat by giving the color plenty of white space. A centerpiece cake like this would be beautiful in a lush red setting. I bet it’s red velvet inside.
Check out this chandelier cake from Intricate Icing Cake Design in Denver. How cool! I love the optical illusion and glass teardrops to help bring the full effect together. Very clever - and surely very delicious too!
